CARROT CAKES



A dessert combining vegetables and dried fruits (almonds) that will surprise your guests.

*Ingredients / for 6 people:

+For cake:
°300 g grated carrots
°250 gm ground almonds (2 bags)
°4 eggs
°200 grams of sugar
°60 grams of flour
°Peel and juice of half a lemon
°1/2 sachet of yeast
°pinch of salt
°butter for the mold
+ice:
°1 tablespoon lemon juice
°150 gm powdered sugar
°1 egg white

+Preparation :

1 Preheat the oven to 180°C.  Peeled & grate carrots to get 300 g.
2 Mix the sugar and egg yolk until the mixture is white. Adding zest, juice of half  lemon, grated carrots, ground almonds, flour, salt also baking powder one by one. Mix well every ingredient.
3 Beat the egg whites until stiff. Gently fold it into the mixture.
4 butter and flour molds. Pour the preparation and cook for 40 to 50 minutes (depending on the oven).

When the cake is done, remove it from the oven, let it cool and remove it from the mold.

Glazing: Mix lemon juice, powdered sugar and egg whites. Spread over cake and leave to dry.
